Low glycemic index foods to keep your blood sugar low!

Nutrition plays an important role in our daily lives and well-being, despite the fact that it is considered a given process. Our psychology depends on our diet, the overall picture of our health and even the condition of our skin.

The glycemic index and the importance that we must give it on a daily basis nutritionally, does not exclusively concern people with diabetes. People in the pre-diabetic stage, with insulin resistance, women during pregnancy for the healthy development of the fetus but also for a normal and healthy pregnancy, people on a diet or with food intolerances, people with metabolic problems, liver problems, it is important to pay attention to the glycemic index of the foods they consume, while the list is long.

So let’s start with the basic foods that we should not consume if we want to keep our sugar at low levels:

First and foremost is white flour and all its derivatives that contain sugar or sweeteners. Biscuits, waffles, white bread, cakes, donuts, sandwich and toast breads and puff pastry go hand in hand with bread. Of course, cereal bars are also in the list as they contain not only flour but also plenty of sweeteners.

Of course all cereals, many nuts, rice wafers, potatoes, sweet potatoes, rice and especially jasmine, spaghetti, noodles, rice and almond milk, raise the glycemic index. Also soft drinks and all juices that you will see marked “from concentrated juice” should definitely be avoided.

It is not possible to eliminate all these foods from our diet such as legumes, cereals and nuts, especially since they are important sources of protein, fiber and omega-3 fatty acids. But we can significantly reduce the most harmful ones such as puff pastry and sweets.

Which foods have a low glycemic index and you can eat without fear:
Quinoa, whole grain pasta and rice, although for many they are difficult to digest. From legumes, chickpeas, lentils and beans. You can drink oat and walnut milk, consume dates, nuts, chestnuts, cashews, almonds (in moderation). Fruits ideally cherries, blueberries, strawberries, apples, pears, kiwi, and secondly peaches, plums and apricots in moderation.

From vegetables, prefer cauliflower, spinach and broccoli as they are excellent sources of vitamins and minerals, carrots, peppers, tomatoes, celery, corn, pumpkin and zucchini. You can also consume oats, and pumpkin seeds or otherwise pasatempo! Remember that foods that do not contain carbohydrates do not have a glycemic index. All meats such as pork, lamb, beef, chicken, turkey, herbs and spices, fish, eggs, yogurt and low-fat cheeses are preferably safe to eat, as are almost all green leafy vegetables.

Extra tips: what can you eat to avoid an unhealthy snack? try a handful of raw nuts that give a feeling of satiety. A yogurt with chopped apple, carrot sticks with lemon, hummus, or a bowl of berries, grapes, some cheese, a light salad, a boiled egg, are some of the many options you have!

Everything about the pear and its cultivation

Pear is one of the most beloved fruits of the Greek countryside, rich in vitamins and ideal food from infancy. It is a raw material for fruit salads and compotes while giving excellent taste to natural juices. It has a high nutritional value, with many antioxidants, fiber and vitamins without having many calories.

The pear (Pyrus communis) belongs to the family Rosaceae, the same family as the apple. It is a deciduous tree with ortho-branched vegetation, which enters fruiting after the 4th year. The productive life of a pear depends on many factors, but it can exceed 40 years. The flowers of the pear are white, and blooms depending on the climate of the area from the end of March to the end of April, usually together with the first leaves, and the flowering lasts about 20 days.

It can be grown at different altitudes, while it is best to avoid the hot and humid summer environment with frequent rainfall, because it is a risk of diseases favored by the humid and hot climate for pears. The cold during the winter months does not affect the tree, but spring frosts can damage the pear tree.

Pear varieties

Pear varieties differ depending on the ripening season. The early ones mature in the summer months, while the late ones mature in the autumn.

Famous Greek varieties are krystal and kontula, both delicious varieties that ripen in summer. There are many foreign varieties that are cultivated in Greece as well. In more detail:

Kontula, with its small light green fruit, is a variety with an excellent aroma and juicy, sweet taste and white flesh. It belongs to the varieties that ripen from the end of June until the middle of July. The fruit is susceptible to infections and is therefore relatively scarce. Ideal variety for mountainous – semi-mountainous areas. The stock can not be stored for a long time, so it should be consumed immediately after harvest.

Krystali is also a very aromatic variety of pear, it is of medium size in green color. Krystali is ready by mid-August so it is good to collect it a little earlier. Store in the refrigerator for a long time. Plant this variety from late fall to March.

PasaCrasana is a foreign variety, to be precise Japanese, with large spherical fruits in brown-green color. It withstands low and high temperatures as well as drought, while it is an aromatic variety but sour. It is planted from the beginning of November to the end of March and matures in September. Characteristic of the variety is the very long shelf life of the fruit.

The Coscia variety is very productive, with medium-sized yellow pears, with a characteristic buttery taste. It is an elongated fruit that ripens in early summer, June and early July, and like the kontula, it needs immediate consumption so as not to spoil. It is ideally planted in mountainous areas during the winter months. From the end of November to the beginning of March. Coscia is a very good pollinating variety for every pear tree.

Abate Fetel is a French variety with a large yellow-brown fruit when ripe. Very aromatic variety in elongated size that matures in September and is stored until January in the refrigerator. It is planted like all varieties from November to March.

Williams is very popular around the world as an industrial variety with great absorption in the compote industry. The size and shape looks like krystali in redder color when it is more mature. It is very well preserved, while it has a very sweet and buttery taste. It ripens at the end of August and the beginning of September.

Finally, we will mention the Santa Maria variety with a harvest period at the end of June and large juicy fruits in yellow color which reddish slightly when ripe. It is a fairly hardy variety, with fruits that are well preserved .

Of course there are still many varieties, some less popular and many that are not preferred for cultivation in Greece.

Proper growing conditions – climatic requirements

Pears, regardless of the variety, prefer hot and dry summers without being bothered by high temperatures, and cold winters (-20 to -7 oC) when they are dormant, but they do not withstand spring frosts, especially during flowering. Sunny areas are ideal with a south orientation, it wants fertile soils preferably with a neutral pH with good drainage and soft and deep soils for the roots to breathe.

Watering the pear

The pear is in great need of watering to produce pears. It needs good drainage in the soils, but also sufficient moisture. Ideally, from May to September it needs watering once a week depending on the heat, while in the months with increased demands (July and August) it definitely needs watering twice a week, as it is the period when the fruits grow and ripen. During the period of flowering and fruiting it is good not to dry the soils and of course not to stagnate water because the flowers will fall. Pear prefers drip irrigation for better and slower absorption. The irrigation of the pear depends and adapts to the variety, the soil and the climate of each area. If you notice yellowing of the leaves on the top and the periphery, then there is accumulation of water and poor drainage.

Planting pear

The pear is ideally planted in the winter when it is dormant. Bare pear seedlings are planted from December to February. Potted or baggy seedlings are planted all year round but the ideal planting period is from October to March.

Planting distances also depend on the configuration during pruning, with ideal distances of 4 * 5 meters to a maximum of 5 * 5 meters. From fences place the pears at least 2.5 meters away. The depth and width of planting must be sufficient so that the root system can fit comfortably and can grow. An ideal pit size is about 60 * 60 cm, but without grafting the plant into the ground. After planting, support the seedling carefully so as not to injure the trunk and well so as not to break or tilt in the wind.

Pear fertilizing

Fertilizing the pear is important to ensure good fruiting. It needs nitrogen in the spring and additional phosphorus and potassium in the early summer. Spraying the leaves with mixtures of trace elements and metals help in better production but can also be bypassed. You can put well-digested manure in early spring, while preferring organic fertilizers suitable for pears is the best option.

Pollination and fertilization of the pear

Bees and air are needed to pollinate and fertilize the pear. The majority of pear varieties need cross-pollination, ie pollination by other pear varieties with the same flowering period which are important to be in the same field or at close distances. Because it is not easy for everyone to have a beehive in their field for pollination of pear and of course other plants, it is good to plant beekeeping plants to attract bees and other pollinating insects, while helping to protect such an important insect in our ecosystem.

Harvest for better maintenance

The pear is good to pick when it has completed its growth but has not fully ripened. It is a fruit that is stored for a long time outside the refrigerator and a long time in the refrigerator depending on the variety, while it is good to harvest early in the morning and not at noon. Store pears away from apples as the ethylene released by the apple causes premature ripening in pears and other vegetables and fruits.

Pruning the pear tree

The pear is a tree that needs annual pruning for good growth and fruiting. We prune when the pear is dormant, from December to February, days with a dry climate, without fear of frost and rain so that the tree does not get moisture and become infected. The incisions should be covered with a protective formulation. Strict pruning reduces fruiting significantly.

Configuration pruning gives shape to young trees, in the shape you desire. Cup-shaped or palmette are the most common forms in amateur gardens. Fruiting pruning reduces stem growth for better fruiting in adult trees. The branches that bear fruit are pruned very little while we remove dry branches and dilute where they are dense so that there is proper ventilation and sun. We take care to control the height with appropriate pruning, as we want the height to serve us in the harvest. We do not prune last year’s shoots.

In the summer during the fruiting period, we improve the quality of the fruit by removing non-fruiting shoots with vigorous growth, while in June, the removal of smaller fruits that rest on larger fruits helps to grow tastier fruits without the risk of worming.

Propagation of pear

Propagation by grafting

The grafting is done on a quince or wild pear tree. Wild pear grafting offers a tree very resistant to drought and climatic conditions. To succeed, it must be done in June or August on an bud, or on an adult tree, in April by grafting the bark.

Propagation by seed

The seed is planted in early spring. Keep in mind that from the seed of a pear, we do not get the same variety of pear, so it needs grafting.

Propagation by cuttings

For propagation by cuttings, we take woody shoots 25-30 cm long in winter and plant in pots with perlite sand and peat in equal proportions. It needs good moisture to grow roots. In the spring they are transplanted.

Diseases of pear

Pear is a sensitive tree and quite vulnerable to insect attacks. For protection against infections and treatment of fungal diseases we can spray with a solution of copper and sulfur before flowering. The most common disease from which the spray protects is the fungus that blackens the leaves and rots the fruit. Protect the pear from infections by cutting the infected branches.

Insects that attack the pear, rot the fruit, mainly infect the leaves and suck their juices.

How to protect your trees in simple ways:

First of all, we always prefer ecological, herbal and homemade preparations, such as soap solution, vinegar solution, improvised insect traps, extracts and essential oils such as thyme.

We systematically disinfect our pruners and saws, while covering cracks and pruning cuts with protectors to prevent infections.

We take care and clean the branches well, at least 20 cm extra from the point of infection. While we check for the existence of plants that are hosts of infectious diseases and we remove accordingly.

Cultivate carrot in your vegetable garden!

Carrots are a very popular vegetable, with a long shelf life inside and outside the refrigerator! This root can withstand many different climates, while there are many varieties which are enough to have carrots in your garden all year round! Home cultivated carrots, in fact, have a very special and delicious taste!

Crop preparation

The most important condition for proper carrot cultivation is that the soil is soft, light, well drained and sandy so that the root can grow without obstacles. Proper soil preparation before sowing is A and Z. We always start with a very good plowing or digging to soften the soil to a depth of at least 20 cm, removing weed stones or even hard soil.

Precisely because it is a root, which means that it is protected from frost, it can be grown in summer and winter! With successive plantings per month, you can have your own carrots all year round!

Depending on the growing conditions and the climate, the carrot needs 2 to 4 months to ripen.

If the soil in your garden is not suitable, such as heavy clay, prefer to plant in a pot or raised bed where you can put the soil of your choice! Avoid manure and fertilizers in the carrot because in most cases the carrot takes out sideways roots, warps or deforms. Prefer simple ingredients to support the growth of your carrots, such as your coffee grounds, which perfectly match the carrot needs for growth! Plant in soft, well-ventilated soil so that the root is not pressed and can grow properly.

Carrot varieties

You will find many varieties of carrots, for different planting seasons but also in different sizes, shapes and colors!

Baby finger or little finger is a small cylindrical carrot up to 10 cm, used mainly for packing in jars.
The Bolero is a slightly conical and large carrot as it reaches 20 cm, is very resistant to disease.
Amsterdam forcing is a small cylindrical carrot, very early.
Danvers was developed to be resistant to hard and dense soils, and is grown mainly for freezing.
Nantes is a cylindrical, sweet and crunchy variety for fresh consumption.
The Chantenay variety produces medium-sized, conical carrots. Used for immediate consumption and processing.
The Autumn King is a large, conical shaped variety for late production.
Kronos are long carrots with smooth roots and durable. Ideal variety for salads.
De la halle is suitable for amateur use as it has very few cultivation needs.
Garo is a mid-early variety with a large size, cylindrical shape and very productive. Suitable for winter cultivation.


Planting

Start sowing if you want to have carrots from the summer, in March with the last frosts (for Greece). Continue sowing every 3 weeks to ensure carrots all year round! As long as it is cold, prefer to sow in beds in a protected area for transplanting outside when the plant reaches 2-3 cm. From spring to late summer, you can sow directly into the ground, as with the transplant the carrot is very easy to injure and stop its growth.

Plant the carrots in a sunny place throughout the day. Otherwise, have at least half a day of sunshine. Sowing distances can be very short, starting at 8 cm distance per seed. In depth, the sowing should not be more than 1 cm deep. You will see the seeds sprout at intervals starting from 10 days and reaching up to 3 weeks, so do not rush to be disappointed! Put 3 seeds per sowing point and carefully remove the weakest ones.

Maintain the soil with the necessary moisture, making quick and surface watering, so that it does not soak the soil, but retains the necessary moisture. Weed carefully so that the roots do not drown from weeds but without injuring your carrots! Keeping the right humidity and weeds away also avoids diseases that can damage your carrots.

Harvesting and storage

In summer, carrots become harder and fibrous due to the heat. Prefer the harvest before the summer heats! Exactly when you will pick your carrots, depends mainly on the size you want! The smaller the carrot harvested, the tastier it is. But if you need a reminder, about 2.5 months of waiting is enough! The carrot should be about the size of your thumb at least.

Always remember that colds go well with carrots, so after a couple of frosts, they sweeten as they store sugars in their roots for energy. In fact, in winter, you can cover your planted carrots with leaves, so that you can pick them later. If you forget them without harvesting, they will sprout the next season from the seeds that will fall from the flowering tops.

To keep the carrots in the fridge for a long time, wash them well with cold water, cut the tops and dry them very well. Then place in an airtight box, if desired wrapped in paper towel. This way the carrots can last unchanged for up to 2 months. Otherwise, the best storage is to leave them in the soil for a little longer!

Date paste for pleasures without guilt!

We saw it, tried it and share it with you for unique sweet pleasures without guilt! Homemade merenda as you will see, is one of the many and different recipes that we find, with one difference: it is completely healthy, has a low glycemic value and is suitable for vegetarians!

With easy and simple steps, you can have at home, a jar maybe much tastier than the classic hazelnut praline, to prepare a snack or an invigorating breakfast! The materials you will need are the following:

250 grams of seedless dates. Be careful not to have sugar in the dates as the standard ones usually contain. Dates are a very sweet and delicious dried fruit with a low glycemic index and great nutritional value.

150 grams of hazelnuts. Prefer if you have access, Greek hazelnut as it is tastier, more aromatic and bitter but a little more expensive.

250 ml of coconut milk or almond milk or oat milk, while if you are not interested in your merenda being exclusively vegetarian, you can also add milk.

70 grams of cocoa or 60 grams of cocoa and 20 grams of carob flour. Personally, I prefer the simplest recipes, so just adding cocoa is a unique result.

A pinch of salt and half a teaspoon of natural vanilla.

Optionally you can add honey, maple syrup, agave syrup etc. up to 100 grams. But I can tell you for sure that without the slightest addition of sweetener, it will not be missing from the recipe. If you want your date paste to be sweet, add up to 50 grams so that you do not miss the opportunity for sweet treats with low glycemic value!

The process is as simple as possible:

Put the dates spread in a pan with a little water just enough to cover them halfway and on high heat let them boil covered for 4 minutes. Set aside the dates to drain and put the hazelnuts in the blender (optionally you can roast them first). Leave them enough to rub well and slowly add the dates, milk, cocoa, vanilla and salt. If you try and think you want the paste to be sweeter, add honey or syrup of your choice!

Store in a glass jar that closes tightly, for a week! If the jar has been properly sterilized, you can keep it longer but never if you have used fresh milk!

This is a homemade treat that will become a habit for the whole family!

Homemade Granola for every taste!

Granola is a grear healthy snacks and breakfast, offering plenty of vitamins, minerals and trace elements, essential for the healthy functioning of our body. Depending on the composition of granola, it can give a special taste and of course detoxification, energy, calories, depending on your needs, helping to create a nutrient-rich breakfast.

Granola, depending on the shape we give, is an energy bar or breakfast consisting of a combination of oats with nuts, sweeteners, dried fruits and sometimes herbs and spices. The combinations are too many depending on our tastes and the imagination we have when we prefer to make our own granola, but of course you will find many combinations in the market.

Depending on your needs, you will cfind combinations for better concentration, for energy, for easier digestion. But what you really need to watch when buying, is the sweeteners that are contained because often, instead of buying a healthy meal, it ends up being a particularly fattening delicacy. You can consume the granola pure or with yogurt, juice or milk.

Preference on granola, because of the energy it offers, the nutrition and, of course, the fact that it is easy to transport it, show hikers, cyclists, athletes and campers.

Homemade granola gives you the advantage of creating just what you want in taste and nourishment, without preservatives.

Oats as a base, is rich in fiber, trace elements and proteins, and – importantly – does not contain gluten. But you can enrich your recipe with quinoa, groats, even rice. Of course, oats need a basic material to bind, and a sweetener to make them more pleasant to taste. Ideal materials are a light seed oil, sunflower oil, coconut oil or olive oil. From sweeteners, you can add in combination or individually honey, molasses, black sugar, maple syrup.

Then comes the addition of extra nutrients. Try various nuts such as crushed walnuts, almonds, sunflower seeds, pumpkin seeds, flaxseed, poppy seeds, peanuts, sesame. Of course you can not miss the dried fruits, such as various berries (cranberry, blueberry, berries, etc.) chopped figs, blonde and black currants, plums, while I personally love the taste of grated coconut.

For chocolate lovers, of course you can add pieces of black chocolate, depending on your mood. While herbs can not be missed. You can add ginger, turmeric, vanilla, nutmeg or cinnamon in a small amount to make your granola more flavourful or more spicy. Personally I love spicy and especially in combination with chocolate.

That’s why I suggest you my own recipe and of course you can make many variations with all the above ingredients.

We need:

400gr oats
150gr of honey
100gr sunflower oil
60 gr crushed raw almonds
60gr crushed raw nuts
30gr sunflower seeds raw
10gr of finely chopped blueberries
2 dried figs finely chopped
1 tbsp. crushed Lavender flowers
2 tsp. Ginger
1 pinch of salt
optionally chocolate

You can put more or less oil, or seeds and nuts according to your own taste.

The preparation is very simple:

In a pan add the honey, the oil, the ginger and the salt and mix. We do not burn it, just like warming up and softening honey to unite the materials. We remove from the heat and add oats, sunflower, lavender flowers, walnuts and almonds. Stir well and pour the mixture into a non-stick baking sheet where it is well pressed. Bake to 150 degrees (preheated) for 25 – 30 minutes. If you want a lighter texture, you can often mix the mixture without first pressing it.

Finally, and after the mixture has cooled, add the chopped dried fruit and chocolate! It is kept in a jar for about 2 weeks. You can cut small pieces in bar size, or break into small pieces for your breakfast!

Store your rice and your legumes properly for longer life!

Many times we end up throwing away expired or poorly preserved food, a waste which is definitely unnecessary. Whether it is a long shelf life or a short one, every food can be stored taking full advantage of its shelf life.

We will start with rice and legumes, foods that are stored for a long time in every household.

Rice has a shelf life of 10 to 18 months. In order to withstand, as soon as it is opened, it must be stored in an airtight glass jar. Proper storage conditions require a cool, dry environment and airtight storage jar to keep moisture, dust and microorganisms away from the rice.

Processed white rice, if stored properly, has a shelf life of almost forever. Something that can not happen with wild rice or brown, as the natural oils on the surface of the rice grain will spoil at some point regardless of storage. The ideal way for long-term storage of rice for longer life, is in an airtight glass jar, in the refrigerator or freezer.

Legumes, ie lentils, beans, chickpeas and any other legume you love, have a similar way of storage! It is worth buying quantity and store as legumes are tasty, nutritious and economical. As with most foods, they should be stored in large glass jars in a cool, dry, dark place. Before storing them in jars, be sure to remove any stones and broken or blackened parts.

Dried legumes do not spoil exactly, but they become too dry and do not boil anymore or need much more boiling or soaking time. An extra secret is a bay leaf in each jar to keep them fresh! With careful storage, legumes last 2 years on the shelf!

Some will say that legumes can last for many years stored but from one point onwards, it is a matter of nutritional value, as over time, dried legumes lose their nutritional value.

Another practical idea is to cook several portions, and store cooked legumes in the freezer. They keep all their nutrients for 6 months in the freezer, and you have ready meals for six months, or legumes to add to any meal, spread, or salad!
